Turkey Bagel Sandwich

Smoked turkey bagel with corn, chilli, broad bean salsa and garlic yoghurt

  • 1 bagel
  • 120g of smoked turkey
  • 1 plum tomato
  • 50g of sweetcorn
  • 50g of broad beans
  • 2 tsp of olive oil
  • 1 red chilli
  • 1 spring onion
  • 2 heads of garlic
  • 100g of Greek yoghurt
  • Small bunch of oregano
  • Smoked paprika
  • Salt on pepper
  • 1 lime juiced
  • 1 breakfast radish
  • Handful of rocket

Method

Slice the bagel ready to toast.

Peel the broad beans, drain the sweet corn mix together.

Finely dice the chilli, slice the spring onions and radish add to the corn and beans for the salsa.

Next chop the fresh oregano and add to the salsa along with the lime juice 1 crushed head of garlic, a pinch of smoked paprika and salt and pepper.

Once the salsa is seasoned correctly add the olive oil.

For the yoghurt crush the garlic mix with the yoghurt season with salt and pepper.

Toast the bagel, spread the yoghurt on the bagel, layer the tomato and smoked turkey on the bottom.

Spoon the salsa on top leaving some to dress the rocket and serve.
