The King's Head in Hursley has kindly shared their delicious
homemade apple and blackberry pie recipe. What will you serve yours
with? Ice cream or custard?
Ingredients
For the pastry;
300g plain flour
150g margarine or butter
Pinch of salt
Dash of water
For the filling;
6 pink lady apples (or you choice of favourite)
1 punnet blackberries
Sugar (to taste)
Caster sugar (to serve)
Method
Prepare your filling first by chopping, stewing then cooling
your fruit.
Preheat your oven to 200C.
Sieve the salt & flour into a bowl and then rub in your
marg/butter until you get a breadcrumb texture.
Add dashes of water and mix until your pastry has the
consistency to roll out.
Split your pastry in two, roll one half out large enough to
cover the base of your baking tin & sides. Once done top with
your stewed fruit & roll out your second piece of pastry large
enough to place over the top. (Any additional pastry can be used to
cut our decorative shapes for the top of your pie).
Press down all your edges ensuring your pie is properly sealed
& using your finger and thumb pinch all around the edges of the
pie.
Prick the top of your pie slightly then cook for approximately
40 minutes checking for a nice golden top.
Once cooked dust with caster sugar & serve with your
favourite ice cream flavour or custard!
